Ingredients
- 15 oz Brown sugar
- 20 oz AP Flour (or 1-to-1 GF Flour)
- 1 tsp Baking soda
- ½ tsp Salt
- 14 oz Oats (gf if you're using gf flour)
- 16 oz Butter, soft, cut into small pieces
Instructions
- Preheat oven to 350 degrees.
- Spray or grease a 9x13 casserole dish or half sheet pan.
- In large bowl, mix all dry ingredients together.
- Add in butter and mix in by hand or with a stand mixer. Stop when batter is still crumbly, not a stiff ball.
- Put 2/3 of batter in the casserole dish and press down into the pan, fully covering the bottom. Make sure batter is even.
- Add any flavor of jam on top of the uncooked batter, one tablespoon at a time until you're able to spread it *thinly* over the top. If you use too much jam, the bars will be soggy and messy to cut/eat.
- Add remaining batter over the jam, but do not press down or spread out. Just drop it on the top evenly and spread it out a little with your fingers.
- Bake 15-20 minutes until lightly golden brown. Cool completely before cutting/serving.
Pairs well with Strawberry Honeysuckle White Tea or Appalachian Lady Grey.
