- Powdered sugar, for dusting
- Cornstarch, for dusting
How to Make Them
- Brew a strong cup of Hibiscus Lavender tea using the hot water. Steep for 10 minutes, then strain and let cool slightly.
- Measure out Β½ cup of the brewed tea.
- Pour the tea into the bowl of a stand mixer and sprinkle the gelatin over the top. Let it bloom for 10 minutes.
- In a saucepan, combine granulated sugar, corn syrup, salt, and the remaining tea.
- Heat over medium heat, stirring until the sugar dissolves, then stop stirring.
- Cook until the mixture reaches 240Β°F on a candy thermometer.
- Carefully pour the hot syrup into the bloomed gelatin while the mixer runs on low speed.
- Increase speed to high and whip for 8 to 10 minutes, until thick, glossy, and fluffy.
- Add vanilla extract and mix briefly to combine.
- Pour the mixture into a parchment-lined pan dusted with powdered sugar and cornstarch.
- Smooth the top and dust lightly with more powdered sugar and cornstarch.
- Let set uncovered at room temperature for at least 4 hours or overnight.
- Cut into squares and toss lightly in powdered sugar and cornstarch to prevent sticking.
