Buttery shortbread with white chocolate, cherries, and a floral twist
These are not your average shortbread cookies.
They’re rich, buttery, and layered with sweet white chocolate, tart dried cherries, and a subtle cherry blossom floral note from the tea.
The almonds add just the right amount of crunch, making every bite feel a little indulgent and a little unexpected.
Why this combo works
- White chocolate adds creamy sweetness
- Dried cherries bring tart, chewy contrast
- Almonds give texture and a slightly nutty depth
- Cherry Cherry Blossom White Tea ties it all together with a soft floral finish
It’s balanced, not too sweet, and honestly kind of addictive.
Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup powdered sugar
- 2 cups all-purpose flour
- 1 tbsp Cherry Cherry Blossom White Tea (finely ground)
- 1/2 tsp salt
- 1 tsp vanilla extract
Mix-ins:
- 1/3 cup white chocolate chips
- 1/3 cup dried cherries, chopped
- 1/4 cup sliced or chopped almonds
Optional glaze:
- 1 cup powdered sugar
- 1–2 tbsp strongly brewed tea or lemon juice
Instructions
- Preheat oven to 325°F and line a baking sheet with parchment paper.
- Cream together butter and powdered sugar until smooth and fluffy.
- Mix in vanilla extract.
- In a separate bowl, whisk flour, ground tea, and salt.
- Gradually mix dry ingredients into the butter mixture until a soft dough forms.
- Gently fold in white chocolate, dried cherries, and almonds.
- Shape dough into a log or press into a disk about 1/2 inch thick.
- Slice or cut into shapes.
- Place on baking sheet and bake for 12–15 minutes, until edges are just lightly golden.
- Cool completely, then drizzle with glaze if using.

Tips for perfect shortbread
- Chop the cherries small so they distribute evenly
- Toast the almonds lightly beforehand for extra flavor
- Don’t overmix once you add the flour to keep the texture tender
Make it your own
- Dip half in melted white chocolate for a more decadent finish
- Add a touch of orange zest to enhance the citrus notes in the tea
- Skip the glaze if you want a more classic, buttery shortbread
When to make these
- Spring gifting (these feel so giftable)
- Tea parties
- Bakery-style weekend baking
- Or honestly…just because
Final bite
These cookies hit every note. Buttery, sweet, tart, nutty, and lightly floral all at once.
They feel a little fancy, a little cozy, and completely unforgettable.
