Cherry Blossom White Chocolate Shortbread Cookies (With Almonds & Dried Cherries)

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1 tbsp Cherry Cherry Blossom White Tea (finely ground)
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Mix-ins:

  • 1/3 cup white chocolate chips
  • 1/3 cup dried cherries, chopped
  • 1/4 cup sliced or chopped almonds

Optional glaze:

  • 1 cup powdered sugar
  • 1–2 tbsp strongly brewed tea or lemon juice

Instructions

  1. Preheat oven to 325°F and line a baking sheet with parchment paper.
  2. Cream together butter and powdered sugar until smooth and fluffy.
  3. Mix in vanilla extract.
  4. In a separate bowl, whisk flour, ground tea, and salt.
  5. Gradually mix dry ingredients into the butter mixture until a soft dough forms.
  6. Gently fold in white chocolate, dried cherries, and almonds.
  7. Shape dough into a log or press into a disk about 1/2 inch thick.
  8. Slice or cut into shapes.
  9. Place on baking sheet and bake for 12–15 minutes, until edges are just lightly golden.
  10. Cool completely, then drizzle with glaze if using.
