Iced Smoky Chai with Maple Cream Cold Foam

Fall drinks have a bit of a temperature problem. The minute September arrives, we’re ready for chai, maple, cinnamon, and all the cozy things, but the actual weather is often still very much iced-drink weather.

This Iced Smoky Chai with Maple Cream Cold Foam is my solution. It has all the flavors I want when fall starts creeping in, but it’s served over ice with a thick layer of maple cold foam instead of steamed milk. The base is our Smoky Mountains Cowboy Chai, so underneath that creamy maple layer you get bold black tea, warming spices, and just enough smoke to keep the whole thing from becoming too sweet.

It also looks a little fancy while being surprisingly easy to make at home, which is generally my favorite category of recipe.

What Makes Smoky Chai Different?

Most chai blends start with black tea and warming spices like cinnamon, ginger, cloves, and cardamom. Smoky Mountains Cowboy Chai takes that basic idea and adds Lapsang Souchong, a black tea known for its distinctive smoky aroma and flavor.

We blend that with Assam black tea, cinnamon, cloves, ginger, cardamom, and star anise. The result is still very clearly chai, but there’s a smoky layer underneath the spices that makes it taste completely different from a traditional masala chai.

That smoke is also what makes maple such a good pairing. Maple syrup has deeper caramelized flavors that can hold its own against the tea instead of simply making it sweeter.

What Is Maple Cream Cold Foam?

Cold foam is essentially milk or cream that has been aerated until it becomes thick and foamy without being heated. For this recipe, we're making a slightly richer version with heavy cream, milk, and real maple syrup.

The goal isn't whipped cream. You want the foam thick enough to float on top of the tea but still loose enough that it slowly works its way into the drink while you sip it.

That creates one of my favorite things about this recipe: the first few sips are creamy and maple-forward, and then the drink gradually becomes a lightly sweetened iced chai as the foam mixes with the tea.

Why Brew the Chai Stronger for an Iced Drink?

Any time you're making an iced tea latte or tea-based mocktail, you have to account for dilution. Regular-strength tea poured over a full glass of ice can quickly start tasting like lightly flavored water.

For this recipe, we're intentionally brewing a chai concentrate using more tea and less water than we would for a normal cup. That gives us enough black tea, smoke, and spice to stand up to both the melting ice and the maple cream.

Smoky Mountains Cowboy Chai also benefits from a good, hot steep. Unlike the green and white teas we've talked about brewing gently, black tea and sturdy chai spices can handle boiling water.

Give it enough time to become properly strong before you strain it.

Use Real Maple Syrup Here

This is one place where I really recommend using pure maple syrup rather than pancake syrup or maple-flavored syrup. There aren't many ingredients in the cold foam, so you'll taste the difference.

Maple syrup also does two jobs at once. It sweetens the cream while adding its own toasted, caramel-like flavor, which works especially well with the smoky tea.

I like this drink only lightly sweetened because the contrast between the maple cream and the stronger chai underneath is what makes it interesting. If you prefer a sweeter coffee-shop-style drink, you can always add another teaspoon of maple syrup directly to the tea.

How to Make Cold Foam Without an Espresso Machine

You definitely don't need an espresso machine or fancy milk frother to make this.

A handheld frother is the easiest option, but a French press makes excellent cold foam, too. Add the cream mixture and quickly pump the plunger up and down until it thickens and increases in volume.

You can also put the ingredients in a small tightly sealed jar and shake vigorously. It won't create quite the same silky texture, but it works surprisingly well.

Whatever method you use, stop before you reach whipped-cream territory. We're looking for something pourable and velvety, not something you could put on a piece of pie.

Can You Make This Ahead of Time?

The chai concentrate is actually perfect for making ahead.

Brew a larger batch, let it cool, and keep it covered in the refrigerator. Then you can assemble an iced chai whenever you want one without waiting for hot tea to cool down first.

I would make the maple cream cold foam immediately before serving, though. Foam naturally loses volume as it sits, and it only takes a minute to make.

This is also an easy recipe to scale up if you're making drinks for several people. Just keep the chilled chai concentrate in a pitcher and make a larger batch of cold foam when you're ready to serve.

Ingredients

  • 2 teaspoons Smoky Mountains Cowboy Chai loose leaf tea

  • ½ cup boiling water

  • 1 teaspoon pure maple syrup, optional

  • ice

  • 2 tablespoons heavy cream

  • 2 tablespoons milk

  • 2 teaspoons pure maple syrup

  • pinch of cinnamon, optional

Directions

  1. Add the Smoky Mountains Cowboy Chai to an infuser and pour the boiling water over the tea. Steep for 5 to 7 minutes, then remove the leaves. Stir in 1 teaspoon maple syrup if desired.

  2. Allow the chai concentrate to cool completely or refrigerate until chilled.

  3. Fill a tall glass with ice and pour the chilled chai over the ice.

  4. Combine the heavy cream, milk, and 2 teaspoons maple syrup. Froth until thickened and velvety but still pourable.

  5. Pour the maple cream cold foam over the iced chai. Finish with cinnamon if desired and serve immediately.
