Smoky Mountains Cowboy Chai pumpkin cream latte made with real pumpkin, maple syrup, and creamy pumpkin foam, an easy homemade fall tea latte.

Smoky Mountains Cowboy Chai Pumpkin Cream Latte

Pumpkin drinks are inevitable in October, and I’m completely fine with that. I like pumpkin. I like chai. I like an unreasonable amount of foam on top of a drink. What I don’t necessarily want is something so sweet that the only flavor left is “fall candle.”

This Smoky Mountains Cowboy Chai Pumpkin Cream Latte goes in a different direction. Our Cowboy Chai already has a bold black tea base, warming chai spices, and that distinctive little bit of campfire smoke from Lapsang Souchong. Add real pumpkin, maple syrup, vanilla, and creamy pumpkin foam, and you get something that feels very October without losing the flavor of the tea underneath it.

It’s basically a pumpkin chai latte that went camping.

Why Pumpkin and Smoky Chai Work So Well Together

Pumpkin itself is actually pretty mild. Most of what we think of as “pumpkin flavor” comes from the ingredients we traditionally pair with it: cinnamon, ginger, cloves, nutmeg, vanilla, brown sugar, and maple.

That makes chai a natural partner for real pumpkin, because a lot of those warm spice notes are already built into the tea.

Smoky Mountains Cowboy Chai is made with Assam and Lapsang Souchong black teas along with cinnamon, cloves, ginger, cardamom, and star anise. The Assam gives it enough body to stand up to milk, while the Lapsang Souchong brings the smoke.

That smoky note is what makes this latte different. Pumpkin and maple can both lean very sweet and soft, so having something darker underneath keeps the drink balanced.

Yes, We’re Using Real Pumpkin

You only need a small amount of pumpkin purée to make a noticeable difference in a drink. One tablespoon per latte is plenty.

Make sure you're buying plain pumpkin purée rather than pumpkin pie filling. Pumpkin pie filling is already sweetened and spiced, which makes it much harder to control the final flavor.

Real pumpkin adds more than flavor, too. It gives the latte a slightly thicker, creamier texture that works particularly well with chai.

The downside is that pumpkin does not magically dissolve into tea. Whisking or frothing everything together well is important, and a tiny bit of settling at the bottom of your mug is completely normal. We are, after all, putting an actual vegetable into our tea.

Do You Need Pumpkin Pie Spice?

Nope.

One of the advantages of making a pumpkin drink with chai is that the tea is already bringing plenty of spice. Cowboy Chai has cinnamon, cloves, ginger, cardamom, and star anise, so dumping a bunch of pumpkin pie spice into it can quickly overwhelm everything else.

I do like a tiny pinch of cinnamon or nutmeg on top, mostly because you smell it before you take a sip. But you don't need to add several more spices to the latte itself.

This is a tea latte first. The pumpkin is joining the party, not taking over the house.

Why Maple Instead of Pumpkin Spice Syrup?

Because pumpkin, maple, and smoke are ridiculously good together.

Maple syrup gives us sweetness while also adding a deeper caramelized flavor that works beautifully with Lapsang Souchong. It also means we don't need to make or buy a pumpkin spice syrup when real pumpkin, chai spices, vanilla, and maple already give us everything we're looking for.

Start with a teaspoon in the latte. If you like sweeter drinks, add another after tasting.

The pumpkin cream on top also contains a little maple, so remember that you're going to get sweetness from both parts of the drink.

How to Make Pumpkin Cream Foam

Pumpkin cream sounds fancy, but it's essentially a lightly sweetened cream foam with pumpkin and vanilla added.

For this recipe, we're combining heavy cream, milk, pumpkin purée, maple syrup, and vanilla and frothing them until the mixture becomes thick and velvety.

Because pumpkin adds weight, this foam isn't going to become quite as airy as plain cold foam. That's okay. I actually want it a little richer for this drink.

You can use a handheld frother, small blender, or French press. Just like the cream cheese foam in our Cinnamon Roll Steamer, you want to stop while it's still pourable. We're making a latte topping, not pumpkin whipped cream.

Can I Make This Latte Iced?

Absolutely.

October in the mountains can give you a chilly morning and an 80-degree afternoon in the same day, so having options feels appropriate.

Brew the Cowboy Chai concentrate as directed and whisk in the pumpkin, maple syrup, and vanilla while it's still hot. Then let the mixture cool completely. Fill a glass with ice, pour in the pumpkin chai concentrate, add cold milk, and top with pumpkin cream.

For the iced version, you can even make the pumpkin cream cold rather than warming it. The smoky chai underneath a cold layer of maple pumpkin cream is especially good.

A Pumpkin Drink That Still Tastes Like Tea

The thing I like most about this recipe is that pumpkin isn't the entire personality of the drink. You still taste the Assam, the chai spices, and especially that little bit of smoke from the Lapsang Souchong.

Then the pumpkin and maple round everything out and give it that unmistakable October feeling.

It's richer than a regular chai latte without being overwhelmingly sweet, and using actual pumpkin makes it feel a little more like something you made in your kitchen and a little less like something that came out of a syrup pump.

Make it hot on the first genuinely chilly morning of October. Make it iced three days later when North Carolina changes its mind.

Either way, we have officially entered pumpkin season.
