There are some fall drinks that sound good because they’re seasonal, and then there are the ones that make me want to immediately stop what I’m doing and go make one. This Spiced Apple Chai Cinnamon Roll Steamer is firmly in the second category.
It starts with a strong brew of our caffeine-free Spiced Apple Chai, which already has real apple and all of those warm baking spices we associate with fall. Then we add steamed milk, vanilla, and a little brown sugar to give it that soft, sweet cinnamon-roll flavor. The part that really makes it, though, is a lightly sweetened cream cheese foam on top. It gives you just enough of that tangy cream cheese frosting flavor to make the whole thing taste like a cinnamon roll without turning your tea into liquid dessert.
And because Spiced Apple Chai is caffeine-free, this is one of those rare cozy fall drinks you can make after dinner without immediately questioning your choices at bedtime.
What Exactly Is a Tea Steamer?
A steamer is usually a warm milk-based drink flavored with syrup, spices, or other ingredients. Think of it as the caffeine-free cousin of a latte. There’s no coffee or espresso involved, and traditional steamers don’t necessarily contain tea either.
For this version, though, strongly brewed Spiced Apple Chai becomes the base, so you get a lot more flavor than you would from warm flavored milk alone. The tea brings apple, cinnamon, ginger, star anise, and cloves, which already puts us most of the way toward that warm cinnamon-roll flavor.

It’s made with honeybush, real apples, cinnamon, ginger, star anise, and cloves. Because the base is honeybush rather than black tea, it has a naturally smooth character and doesn't bring the tannin or caffeine you'd get from a traditional black tea chai.

How to Make Cream Cheese Foam for a Tea Latte
This sounds considerably more complicated than it actually is.
For one drink, you only need a tablespoon of softened cream cheese, along with heavy cream, milk, and a little maple syrup. Froth everything together until it's thick and creamy but still pourable.
The texture matters here. You aren't trying to make actual cream cheese frosting or whipped cream. The foam should sit on top of the steamer for a minute and then gradually melt into the warm drink as you sip it.
A handheld milk frother works well. You can also use a small blender or vigorously whisk everything together. The most important thing is making sure the cream cheese is completely softened first. Cold cream cheese will leave you chasing tiny lumps around your glass, which is not the relaxing fall beverage experience we're going for.
Why Brown Sugar Instead of Maple Syrup in the Steamer?
I love maple in a chai latte, but we just used it pretty heavily in our September recipes. More importantly, brown sugar tastes a little more like the filling inside a cinnamon roll.
Brown sugar contains molasses, which gives it a deeper, slightly caramelized flavor compared with regular granulated sugar. Combined with vanilla and chai spices, it gives this drink a baked quality without needing an artificial cinnamon-roll syrup.
We're only using a small amount because the cream cheese foam is sweetened too. Start with a teaspoon and adjust from there. If your idea of a cinnamon roll involves enough frosting to cause structural problems, you may want a little more.
Can You Make This Dairy-Free?
You can easily make the steamer itself dairy-free by using oat milk or another plant-based milk. Oat milk is especially good here because its natural sweetness works beautifully with apple and cinnamon.
The cream cheese foam takes a little more experimentation because plant-based cream cheeses and creams behave differently depending on the brand. A dairy-free cream cheese combined with a barista-style oat milk or plant-based heavy cream is your best bet.
You can also skip the cream cheese entirely and make a simple vanilla cold foam. It won't have quite the same cinnamon-roll effect, but it will still be delicious.
Your After-Dinner Chai Has Arrived
There’s something about October that makes a warm drink after dinner feel less like a beverage and more like an activity. This one lands somewhere between tea and dessert, but it’s still simple enough that you don't need to turn your kitchen upside down to make it.
