Built on a homemade chai concentrate made with our Smoky Mountains Cowboy Chai, it combines bold black tea, warming spices, spicy ginger beer, creamy coconut milk, and fresh lime for a drink that's equal parts comforting and refreshing.

Ingredients

  • ½ cup Smoky Mountains Cowboy Chai
  • 4 cups water
  • 2 cinnamon sticks
  • 1 tablespoon maple syrup (optional)
  • ½ cup chilled chai concentrate
  • 3 oz ginger beer
  • 1 oz full-fat coconut milk
  • Juice of ½ lime
  • Ice
  • Lime wheel
  • Candied ginger
  • Cinnamon stick

Directions

  1. 1. In a medium saucepan, combine the Smoky Mountains Cowboy Chai, water, and cinnamon sticks.
  2. 2. Bring the mixture to a gentle simmer over medium heat. Reduce the heat and simmer for 15–20 minutes to create a rich chai concentrate.
  3. 3. Remove from the heat and strain out the tea leaves and cinnamon sticks. Let the concentrate cool completely, then refrigerate until chilled. Store any extra concentrate in an airtight container in the refrigerator for up to one week.
  4. 4. Fill a copper mug or tall glass with ice.
  5. 5. Pour ½ cup of the chilled chai concentrate into the glass.
  6. 6. Add the coconut milk and fresh lime juice. Stir gently until the coconut milk is fully incorporated.
  7. 7. Top with the ginger beer and give the drink one final gentle stir.
  8. 8. Garnish with a lime wheel, a piece of candied ginger, and a cinnamon stick, if desired. Serve immediately.
